Taco Tuesday!
Just got back from T.J.'s (that's how I refer to Trader Joe's)...now we actually have food in the house...yeah!
Here's what's we got for dinner tonight:
corn taco shells (hard...sometimes I buy soft and fry them, but not today!)
ground turkey
shredded cheese
tomato (chopped)
lettuce (gotta go pick some out of the garden)
sour cream
salsa
~So easy! Brown the ground turkey, add seasonings as you like. (T.J.'s does have a good Taco Seasoning Mix, but my kids don't like it spicy so I add very little.) Fill the shells with turkey, cheese, and all the fixings! Enjoy!
Okay, so I realize not everyone is lucky enough to live near an IKEA...but we do! Did you know that you can purchase a meal for your family, very similar to what you can eat in their restaurant? I'm talking meatballs, mashed potatoes, & gravy...all for around $10. We had that whole she-bang on Friday night...with meatballs to spare! So here's what's on the menu for tonight:
Pasta (DeCio Elegant Handmade Pasta, local company here in Tempe. http://www.deciopasta.com/, tossed with a little EVOO & parmesan)
Meatballs
Spinach & Strawberry Salad (freshly picked spinach from our garden, sliced strawberries, drizzled with a raspberry vinaigrette)
*Note that I like to keep it simple (either that, or I'm lazy, take your pick!). But if you want to make your own meatballs from scratch, or add some nuts, feta, etc. to the salad...more power to you!
Dinner for Tuesday, April 12th~*Vegetarian Taco Salad
What You'll Need:
tortilla chips or tostada shells
lettuce
1 can kidney beans
1 can corn
tomato (chopped)
sour cream
salsa
What to Do:
Warm beans & corn on stove or in microwave. Spread chips or tostada shells (whole or crunched up) on individual plates. (I do it this way because different kids like/dislike certain ingredients, so you can personalize it). Next layer lettuce, beans & corn, cheese, and any additional toppings you would like.
*This can also be made with either ground beef or turkey if you prefer to have a "meaty" version :)
